I play Æmberlution (MM 394). As the active player, do I get to choose the order creatures in my hand enter play? Do I also choose the order creatures in my opponent's hand enter play?

Yes. The active player decides which player’s creatures will enter play first and the order of the creatures. Once that player’s creatures have all been put into play, the other player’s creatures enter play.
