My opponent has The Chosen one (DT 332) with 8 damage on it. During my “ready cards” step I have 4 exhausted creatures. Since 1 damage will destroy The Chosen One, can I ready my other 3 exhausted creatures?

No. The Chosen One’s ability creates a replacement effect that replaces the readying of cards during the “ready cards” step. All the damage dealt to The Chosen One is dealt simultaneously in this case, so you ready no creatures, The Chosen One is dealt 4 damage, it is destroyed, and all excess damage to it is ignored.
